Inspectors found several significant food safety violations during the inspection. The restaurant did not have a verifiable employee health policy on site. Several foods in the walk-in cooler, including cooked potatoes, cooked chicken, cooked soup, and raw eggs, were held above the required cold temperature; the manager discarded these foods during the inspection. The walk-in cooler itself was measured at 57°F, above the required 41°F or below, and was tagged and held for inspection and not allowed to be used. Citations were issued for these significant violations.Inspectors also found evidence of pest activity, including rodent droppings in multiple areas and live flies in food and drink preparation areas. A citation was issued for this significant violation. Other findings included missing consumer advisory information for menu items that may be served raw or undercooked, improper thawing practices, open doors without proper screening, a leaking walk-in cooler condenser, soiled wiping cloths stored on cutting boards, food debris on refrigerator handles, rusted shelving, a missing or unlocated backflow prevention device for the ice machine, clutter and items stored on the floor, and missing allergen training for food service sanitation managers.
