- comments: observed no procedures and supplies for responding to vomiting and diarrheal events. Instructed manager to provide clean up policy and supplies. Priority foundation 7-38-005
22. Proper cold holding temperatures
- comments: observed cold tcs food (cooked pasta, cheese, salads, etc) stored in prep cooler at improper temperature 59. 8f-61. 2f. Instructed manager to discard approximately 100lbs and $700 of product. All tcs cold food must maintain 41f or below during storage, preparation, display and service. Priority 7-38-005 citation issued

- comments: observed rear prep cooler not maintaining proper temperature 58. 2f instructed manager to repair and maintain cooler at 41f or below. Cooler is tagged held for inspection and must not be used until reinspected by chicago department of health priority 7-38-005 citation issued

- comments: observed turkey thawing in standing water in 3-compartment sink. Instructed manager to properly thaw under cold running water, refrigeration or part of cooking process.

- comments: observed soiled wiping cloths stored on prep table. Instructed manager to store wiping cloths in sanitizing solution between uses.

- comments: observed raw wood surfaces on prep table. Instructed manager to seal all raw wood surfaces to make smooth and easily cleanable.

- comments: observed debris on interior and exterior surfaces of holding units, prep tables, shelving units, coolers and freezers. Instructed manager to clean and maintain.

- comments: observed leaking drainpipe under hand washing sink in prep area and missing drainpipe under utility sink. Instructed manager to repair/replace and maintain.

- comments: observed no covered receptacle in small staff washroom. Instructed manager to provide and maintain.

- comments: observed no waste receptacles at hand washing sinks in prep and washroom areas. Instructed manager to provide waste receptacles in all areas waste is commonly discarded.
