22. Proper cold holding temperatures
- comments: found raw diced salmon on a stick ready to be cooked inside the cooler under the charcoal grill at a temp of 50. 8f to 51. 4f. Cold food must maintain a temp of 41f or below. Food discarded and denatured: pounds 8, value 140 priority violation: 7-38-005, consolidated with the above violation

- comments: excess ice build-up at condenser unit inside the walk-in freezer(unit located inside the walk-in cooler) instructed to repair issue. No food under the unit.

- comments: accumulated grease and food debris inside fryer, utility connections, wheel of equipment, and equipment surfaces behind cooking line. Must clean and maintain. Must not use cardboard for elevation of charcoal grill. Also, no aluminum foil liner for under the cooking equipment. The surface must be smooth, cleanable, and non-absorbent material.
