- comments: noted internal temperatures of the following tcs food items inside service cooler to be improper:-hamburgers48. 6f, cheese 47. 6f, eggs 44. 3f, whipped cream 49. 6f, potatoes 46f, coleslaw 45f. Priority violation #7-38-005
37. Food properly labeled; original container
- comments: noted assorted food items inside refrigeration units not properly labeled. Instructed to properly label all food items with product names including bulk food containers.
38. Insects, rodents, & animals not present
- comments: noted over 50 rat droppings on the floor and along the wall base at the rear bar by the smoker, behind the storage unit by the bar next to the kitchen prep, and at the basement dry food storage. Instructed to detail clean and sanitize affected areas, eliminate pest activity. Instructed to consult with pest control company and have premises treated. Priority foundation #7-38-020(a).
39. Contamination prevented during food preparation, storage & display
- comments: noted disposable cup inside a container of food (mashed potatoes) used for scooping. Instructed to to use spoons with handles, tongs, and ladle for scooping food.
47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: cutting boards with open dark stains. Must refinish or replace damaged or stained cutting boards.
55. Physical facilities installed, maintained & clean
- comments: noted the following:- -stained and dirty walls behind the smoker -holes and openings, especially at the basement food/dry storage area -thick grease on the floor at the smoker house, along the wall base, and underneath equipment, especially at the smokehouse, bars, and basement food/dry storage area. Instructed to detail clean all walls and seal all holes and openings to prevent entry places for pests. Must also clean and sanitize areas where rat droppings were found.
