- comments: improper hot holding temperature of tcs foods. Observed sausage at 129f in the hot holding unit. Management instructed to maintain all hot foods above 135f. Priority violation 7-38-005. Citation issued.
22. Proper cold holding temperatures
- comments: improper cold-holding temperatures of tcs foods. Observed eggs at 45f inside of the prep cooler next to the grill. Observed raw bacon at 54f sitting on top of the prep table. Management instructed to maintain all cold tcs foods below 41f. Priority violation 7-38-005. See violation #21 above for citation.
38. Insects, rodents, & animals not present
- comments: observed approx. 20 live small flying insects on the walls and ceiling around the 2 fountain pop dispensers, on the ceiling tiles of the dining room, in the men's washroom and manager's office. Additional pest control service is needed to eliminate the pest activity. Priority foundation violation 7-38-020(a). Citation issued.
