- High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. hushpuppies mix (46F - Cold Holding); cut tomato (46F - Cold Holding); sliced tomatoes (45F - Cold Holding); shredded cheese (46F - Cold Holding); crab cake mix (46F - Cold Holding) all items in reach in cooler on cook line, per employee lid and items where consistently taken out of cooler/left open for approximately 3 hours, all items moved to reach in freezer, all items retemped below 41F. cooked garlic in oil (52F - Cold Holding) sitting out on rack in kitchen, per employee garlic was taken out of cooler less then 1 hour prior, garlic placed back in cooler. **Corrective Action Taken** **Repeat Violation** **Admin Complaint**

Observed 3 rodent droppings on top of the dish machine. Observed 7 rodent droppings on the floor under the dish machine. Observed 6 rodent droppings under the shelving units in the mop sink area. Observed 2 rodent droppings to the side of the standup reach in the cooler between the cooler and the wall. Observed 24 rodent droppings under the storage shelves in the dry storage area. **Warning**

- High Priority - Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Observed employees on the main cook line switch between working with raw food and cleaning utensils for ready-to-eat food without changing gloves and washing hands.

In the top portion of the flip top reach in the cooler closest to the front counter, fish (68F - Cold Holding). Operator began cleaning droppings from kitchen floors. **Corrective Action Taken** **Warning** - From follow-up inspection 2021-11-05: At time of inspection, Behind walk in cooler between wall and walk in cooler by ice machine approximately 20 rodent droppings. Below dish washer, in corner of wall approximately 15 rodent droppings. In women's restroom behind second door to stall 5 rodent droppings. **Admin Complaint** - From follow-up inspection 2021-11-10: Observed approximately 40 rodent droppings in establishment: 15 in drip tray below oven in kitchen, 12 behind stand up reach in cooler in prep area, 9 behind reach in cooler near back door and 4 under soda machine in server area. Manager began cleaning up droppings.
