10. Adequate handwashing sinks properly supplied and accessible
- comments: observed no paper towels in employee bathroom where employees are unable to dry hands. Instructed manager hand washing sinks must be provided with individual disposable towels, a heated-air hand drying device, a continuous towel system that supplies the user with a clean towel, or a hand drying device that employs an air-knife system that delivers high velocity, pressurized air at ambient temperatures. Manager immediately restocked paper towel dispenser. Priority foundation. 7-38-030(c).

10. Adequate handwashing sinks properly supplied and accessible
- comments: observed no hand washing signage at hand washing sink in prep area. Must provide.

23. Proper date marking and disposition
- comments: observed no date marking on the following food items in walk in cooler: cooked ground beef, cooked cream of chicken soup, cooked chicken noodle soup, cooked chicken wings, cooked meatballs, cooked pasta noodles, refried beans and rice. Instructed certified food manager to discard and denature food immediately. In total, all food weighs approximately 150 lbs at a cost of $300. 00. Ready to eat, tcs foods held in retail food establishment for more than 24 hours must clearly mark to indicate the date or day by which the food shall be consumed or discarded when held at a temperature of 41. 0f or less for a maximum of 7 days. The day of preparation shall be counted as day 1. Priority foundation violation. 7-38-005.

39. Contamination prevented during food preparation, storage & display
- comments: observed bread containers on floor in walk in freezer. Must elevate all food containers at least 6 inches off floor.

49. Non-food/food contact surfaces clean
- comments: observed grease build up inside cooking fryer. Instructed to detail clean and maintain.

53. Toilet facilities: properly constructed, supplied, & cleaned
- comments: observed no lid on trash can in employee bathroom. Must provide.

55. Physical facilities installed, maintained & clean
- comments: observed flour on floors throughout prep area. Also observed water on floor in walk in cooler. Instructed to clean frequently and maintain.

57. All food employees have food handler training
- comments: observed no proof of food handler training certificates. Must provide for all current employees.
