- comments: observed no proper label on tcs food (tuna) instructed to remove. All items sold must be properly labeled.
38. Insects, rodents, & animals not present
- comments: observed evidence of rodent activity on the premises. Observed approximately 25 mouse droppings on the floor under-display coolers and under the pet food aisle. Also observed were approximately 10 large flies throughout the facility. Instructed to clean and remove all rodent droppings from all affected areas. Additional pest control service is needed to eliminate the pest activity. Priority foundation #7-38-020(a). Citation issued.

- comments: noted fly trap hanging directly above prep table in prep area behind counter. . According to food code: insect control devices shall be installed so that the devices are not located over a food preparation area. Must relocate existing fly trap devices in direct violation of this rule.

- comments: noted rear exit door open and not insect proof due to torn mesh attached to rear screen door. ?instructed to use a 16 mesh to the inch screen to protect again the entry of insects

- comments: observed facility without a chemical test kit for on-site sanitizer or ware washing area. Informed person in charge, a test kit that accurately measures the concentration in mg/l of sanitizing solution must be provided. Priority foundation violation #7-38-005. Citation issued.

- comments: observed the inside of the walk-in cooler with a build-up of debris and spills on the floor and items on the floor. Instructed to clean, and maintain and remove items from the floor.

- comments: observed the butcher saw in the rear meat prep room with a build-up of food debris on parts. Instructed to clean, sanitize and maintain all equipment.

- comments: observed no hot water on-premises. Hot water is not observed at the following sinks: prep hand sinks, washbowl sink, and 3-compartment sink. Informed person in charge of hot water generation and distribution systems shall be sufficient to meet the peak hot water demands through the retail food establishment. Must correct and maintain. Priority violation #7-38-030(c). Citation issued.
