- comments: observed no certified food manager present while tcs foods (breakfast sandwiches and pork shoulder) were being prepared and served. Management instructed that a certified food manager must be present at all times while tcs foods are being prepared or served. Priority foundation violation 7-38-012. Citation issued.
25. Consumer advisory provided for raw/undercooked food
- comments: observed no consumer advisory disclosure on the menu for raw or undercooked foods. Management instructed to disclose or describe which foods can be ordered raw or undercooked and link those items to the reminder statement on the menu. Management also instructed to add the following sentence before the reminder statement:"these items can be ordered raw or undercooked or may contain raw or undercooked ingredients. " priority foundation violation 7-38-005.
43. In-use utensils: properly stored
- comments: observed the ice scoop stored in the ice bin. Management instructed to store the ice scoop outside of the ice bin in a clean container. Also observed ice cream scoops stored in a container of standing water. Management instructed to store the scoops in a dipper well with running water or other sanitary means.
45. Single-use/single-service articles: properly stored & used
- comments: must store single use food storage containers inverted on the shelves to prevent contamination.
49. Non-food/food contact surfaces clean
- comments: clean the interior of the microwave, side of the stove, interior of deep fryers and prep coolers, prep tables in the food prep area, the top of the dish machine, and exterior of the grease trap.
53. Toilet facilities: properly constructed, supplied, & cleaned
- comments: no covered waste receptacle was provided in the employee washroom. Management instructed to provide and maintain.
55. Physical facilities installed, maintained & clean
- comments: seal the open seams of the frp board above the cook's line to prevent pest harborage conditions.
