- comments: observed the following tcs food items at improper cold holding temperature. Raw chicken found at 50. 1f in refrigerator, cooked pork with vegetables found at 46. 4f in refrigerator, cooked empanadas stuffed with chicken found on counter at 68. 9f, cooked empanadas with beef found on counter at 67. 4f, and cooked beef found at 62. 3f in refrigerator. Instructed manager proper cold holding temperature must be at 41. 0f or below. Instructed manager to discard and denature food immediately. All food weighing approximately 100 lbs at a cost of $175. 00. Priority violation. 7-38-005. Citation issued.

37. Food properly labeled; original container
- comments: observed bulk food containers on premises without a label (flour, rice, sugar, etc). Instructed to provide the common name on bulk containers to properly identify food item.

47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed dirty cutting board with dark stains and deep grooves in main prep area. Must detail clean or replace.

52. Sewage & waste water properly disposed
- comments: observed sewage backup inside 3-compartment sink and at grease trap when water is being drained at main prep area. Sewage must be completely drained into an approved sewage system and must be repaired and maintained at all times. Priority violation. 7-38-030(c). Citation issued.
