Inspectors found several significant food safety violations during the inspection. A handwashing sink at the bar did not have paper towels available, and citations were issued. Several cold foods, including fresh cheese, leafy greens, sausage, sliced potatoes, and roasted red peppers, were held at 47–50°F, above the required cold holding temperature. These foods were voluntarily discarded. A two-door cooling unit was also found operating at 50°F while holding temperature-sensitive foods; it was tagged and held for inspection, and a citation was issued.Inspectors also found pest activity, including about 13 small live flies in the rear prep and dish area, dining room, and on place-setting papers, as well as about 20 rodent droppings on shelving and in a storage corner. A citation was issued for this significant violation. Additional issues included rusty storage carts, damaged flooring with food debris buildup, items stored on the floor in prep, dish, and basement liquor storage areas, and dirty ventilation fans in the walk-in cooler.
