- comments: 2-402. 11 food handlers must wear effective beard restraints.

48. Warewashing facilities: installed, maintained & used; test strips
- comments: 4-301. 12(b) noted at this time several extra large pots unable to be submerged into the three compartment sink to enable washing rinsing and sanitizing. Instructed to provide a larger three compartment sink to hold all large pots or remove large pots. Priority foundation violation 7-38-025. Citation issued.

48. Warewashing facilities: installed, maintained & used; test strips
- comments: 4-603. 15 must provide a clean in place written cleaning procedure/alternative manual washing/sanitizing procedure for the large floor stand grinder.

49. Non-food/food contact surfaces clean
- comments: 4-601. 11(b) food encrusted table top can opener noted. Must clean after each use. ----extremely dirty and badly stained cooks line cutting board with deep cut grooves. Must replace. 4-602. 13--- peeling plastic on the sides of metal coolers in the rear kitchen. Must remove.

51. Plumbing installed; proper backflow devices
- comments: 5-205. 15 extremely slow draining hand washing sinks in front and rear kitchen. Must repair. ----must not use duct tape as a means of repair on the dish area hand sink splash guard.

55. Physical facilities installed, maintained & clean
- comments: 6-201. 11 must not use duct tape as a means of repair for the wall at the entrance to the kitchen and under the dish machine. Must properly repair. ----all holes in walls throughout the facility in all areas must be sealed.

59. Previous priority foundation violation corrected
- comments: 8-404. 13 (b:3) previous priority foundation violation #38 from report #2570494 on 1-30-23 not corrected. Still noted rat droppings in the following locations: approximately 3 droppings at front server station, 5 to 10 droppings under the dish room bulk food and pot/pan storage shelving, 10 to 15 in the canned/bottled beverage storage room, 15 to 20 under shelving throughout the furnace room and 20 to 30 under the rear dry food storage room shelving. Must have pest control co. Service establishment for rodents and provide a service report stating all activity has been eliminated. Priority violation 7-42-090 citation issued.
