- comments: observed the following prepared tcs foods not properly date labeled with an expiration date. Foods noted with preparation dates only. All prepared on site, stored in bulk and held longer than 24 hours. Foods such as sliced turkey, sliced tomatoes, sliced chicken, chicken salad. Instructed all tcs prepared foods held longer than 24 hours must have an expiration no longer than 7 days. All foods discarded. Priority foundation violation 7-38-005 citation issued.

36. Thermometers provided & accurate
- comments: missing internal thermometer inside the deli meat cooler at ordering window. Must replace.

38. Insects, rodents, & animals not present
- comments: no pest control log book available during the inspection for review. Instructed to provide a pest control log book with all required documentation for review. Priority foundation violation. No citation issued at this time.

41. Wiping cloths: properly used & stored
- comments: noted wiping cloth being stored on the splash guard of the rear hand washing sink. Wiping cloths must be held in a clean container with a sanitizing solution between use.

- comments: extremely dirty interior of the mop sink. Must clean and maintain.

54. Garbage & refuse properly disposed; facilities maintained
- comments: observed excessive amounts food debris, potbelly food waste containers such as used cups, ice cream gallon, potbelly paper food bags,soiled plastic gloves. Plastic bags of garbage on grounds under and around outside waste container. Neighboring waste containers all overflowing with bags of garbage. Instructed to remove all debris from surrounding grounds, clean and maintain outside garbage area. Priority foundation violation 7-38-020(b) citation issued.

55. Physical facilities installed, maintained & clean
- comments: observed walls in the following areas in poor repair with chipping plaster, peeling paint: at the rear prep table/slicer area, at the mop sink area. Instructed to repair to be smooth and cleanable. ----missing ceiling tile above the entrance to the walk-in cooler. Must replace. ----must not use cardboard as matting for floors inside the walk-in cooler.

61. Summary report displayed and visible to the public
- comments: noted the summary report given and posted on 1-13-20 not posted in plain view of the establishments customers. Summary found inside a binder with other papers. Given summary report for today's inspection and instructed to post. Priority foundation violation. No citation issued at this time.
