- comments: inside walk-in cooler observed ready to eat tcs foods held over 24 hours(rice, beans, cooked chicken and cooked beef. ) not date marked to indicate the date in which the food must be discarded or consume. Instructed pic to date mark all ready-to-eat- tcs foods held more than 24hours. Pic discarded #40 of food worth $150 priority foundation violation 7-38-005. Citation issued.

- comments: mus properly label food storage containers when food is not in the original container.

- comments: observed wiping cloths stored on top of prep tables. Must properly store wiping cloths in a sanitizing solution when not in use.

- comments: observed cooking pork carnitas frying pots that are too large to wash rinse and sanitize in 3-compartment sink. Instructed to provide removed equipment. Must install larger sink to fully submerge or provide an approved alternative procedure.
