- comments: observed no valid certified food manager on duty nor food managers certificate posted to view while tcs foods are being prepared, handled and served. Such as (cooked ground beef, italian beef,cheese sauce,etc).

35. Approved thawing methods used
- comments: observed 3 bags of frozen chicken to the 3 comp sink in the rear thawing. Instructed manager to properly thaw foods under cool running water or inside the walk in cooler.
37. Food properly labeled; original container
- comments: instructed manager to properly label bulk storage containers in the rear with food items name.
39. Contamination prevented during food preparation, storage & display
- comments: observed the flour and some spices and meal for cooking uncoverd in the rear prep area on the top of storage containers. Instructed manager to cover overnite when not in use to prevent any contamination.
49. Non-food/food contact surfaces clean
- comments: must detail clean the interior of the walk in cooler: floors,walls,ceiling and shelving.
53. Toilet facilities: properly constructed, supplied, & cleaned
- comments: observed the wash room not clean. Must detail clean and maintain the fixtures, the walls and floors.
