Observed dirty and torn gaskets at 2-door prep cooler under microwave when first entering establishment. Must replace. 49 observed heavy grease spills on exterior of cooking equipment and on exterior of prep cooler doors in prep area. Must detail clean and maintain. 55 observed dirty floors throughout prep area. Must detail clean and maintain. Observed card board on floors throughout kitchen prep area. Must remove.
