- comments: observed procedure however must provide all necessary items in policy including disposable gloves, face mask and appropriate sanitizer to kill the norovirus. Priority foundation

22. Proper cold holding temperatures
- comments: observed 2 tray,(9) corn beef briskets date marked ( 4/18/21) maintained at improper cold temperatures. Instructed to maintain cold (tcs) foods maintained at improper cold temperatures ranging from 53. 1f to 54. 0f. Instructed to maintain cold tcs foods at 41. 0f or below. Food was removed and discarded by pic at approx 100lbs cost approx value of $500. 00-cos. Priority violation issued 7-38-005

38. Insects, rodents, & animals not present
- comments: evidence of improper pest control on premises. Observed 81 mice droppings on floor under shelving unit ,behind toilet in washroom and all over bottom shleves in employees washroom. Instructed to clean/ sanitize all areas. Recommed pest service. Priority foundation issued 7-38-020(a).

- comments: observed no pest control book for new pest control company. Instructed to provide. Priority foundation issued

48. Warewashing facilities: installed, maintained & used; test strips
- comments: observed no chlorine sanitizer test kit for sanitizer being use at 3- compartment dishwashing facilities. Instructed to provide. Priority foundation issued 7-38-005.

49. Non-food/food contact surfaces clean
- comments: observed hood filters of cooking equipment not clean. Instructed to clean/maintain.

51. Plumbing installed; proper backflow devices
- comments: observed leaky faucet at 3- compartment sink. Instructed to repair.

55. Physical facilities installed, maintained & clean
- comments: observed ceiling in poor repair above prep table in front prep area. Instructed to repair ceiling.

57. All food employees have food handler training
- comments: observed no proof of food handlers training for new employees. Instructed to provide.

58. Allergen training as required
- comments: observed no proof of allergen training for manager. Must provide.
