- comments: observed time/temperature control for safety foods (pork sausage, eggs and guacamole) at improper cold holding temperatures ranging from 51f - 57f, located in reach in cooler. Instructed to discard and denature all said tcs foods. Pproxx 4lb at 50. Instructed to provide cold holding temperatures at a minimum of 41f or below. Priority violation citation issued.

- comments: observed ready-to-eat time/ temeperature control for safety foods (tcs): cooked sausage, cooked tuna, cooked lasagna, held for over 24 hours without discard date. Instructed facility to provide discard date for any ready-to-eat tcs foods held for over 24 hours. Priority foundation. 7-38-005. Citation issued.

- comments: observed steak and eggs on menu, said items can be ordered under cooked. Found reminder and diclosure by asterisk. Found no disclosure by footnote instructed facility to provide footnote, disclosure and reminder for menu items that can be ordered under cooked. Priority foundation. 7-38-005.

- comments: found walls behind cooking equipment filled with an accumilation of grease. Instructed manager to clean sanitize and maintain.
60. Previous core violation corrected
- comments: found continued non-compliance, the following previous core violation was not corrected by correct date from inspection report #2363102: observed a cutting board opposite flat top grill in rear food prep area with deep grooves and dark stains. Instructed to repair or replace and maintain a smooth, cleanable surface. Instructed manager to comply. Priority foundation violation. 7-42-090
