22. Proper cold holding temperatures
- comments: observed the following cold tcs foods found at improper temperatures during time of inspection. Noted approximatley 50 lbs commercially packaged (bologna, salami, hot dogs, polish sausages, deli meat, approx. 85 lbs variety fresh cheeses, 70 lbs variety packaged sour cream, all ranging between 51f-57f. Noted approximately 8 lbs chorizo (55f), 6 lbs quesadilla filling mix (53f). All said tcs foods stored inside display cooling units located in grocery areas and in upright coolers stored in the prep area of the restaurant. Instructed to hold all cold food items @41fr and below and maintain. All said items were voluntarily discared by pic. Priority violation. #7-38-005. Citation issued. Total cost of discarded items $500.

33. Proper cooling methods used; adequate equipment for temperature control
- comments: observed the following equipment at improper temperatures during the time of inspection while storing tcs foods. . . They are as follows far right dairy cooler containing fresh cheese, sour cream, etc located in grocery across from chicken/pork (53f) 2 door cooler with cold hold attached in a restaurant (50f), and a display cooler located on the west wall of grocery containing fresh cheese, hot dogs, breakfast meat, pork (55f). Instructed to repair and maintain cooling equipment at 41f or below and maintain at all times. Priority violation. #7-38-005. Citation issued.

36. Thermometers provided & accurate
- comments: observed missing thermometers throughout cooling units throughout grocery store (dairy, meat, processed foods) instructed to provide and maintain

47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed cutting boards located in meat prep with deep cuts and dark groovess. Instructed to replace in order to prevent contamination.

49. Non-food/food contact surfaces clean
- comments: observed inside of raw meat casing located in rear of grocery store in need of cleaning. Noted wired racks, storage containers ans shelving rack in chicken packing prep area with excessive dried food debris buildup. Instructed to clean and maintain

55. Physical facilities installed, maintained & clean
- comments: observed water damaged, discolored and missing ceiling tile throughout grocery 7,8,9, aisles where cooling units are located and near meat department. Instructed to replace and maintain smooth and easily cleanbale surfaces

56. Adequate ventilation & lighting; designated areas used
- comments: observed fans inside produce walk in cooler, chicken packaging and rear prep area with excessive dirt and dust build up on surfaces. Instructed to clean and maintain
