- comments: 2-101. 11 observed no city of chicago food service sanitation manager on site nor an original/valid city of chicago food service sanitation manager's certificate posted while tcs foods (cheese) are being prepared handled and served to the public. Instructed to always have a city of chicago food service sanitation manager on site at all times the facility is open operating and preparing open foods (nachos with cheese and jalapenos) to the public. - comments: 3-501. 16 observed tcs foods at inadequate cold holding temperatures located in a cold holding unit in the customer service area; about 50 lbs of deli meat lunchables, deli meat packages and prepackaged deli meat sandwiches ranging from 50f-56f, about 15 lbs of coffee creamer and milk at 51f, about 10 lbs of beef sausages at 53f and about 20 lbs of cheese at 52f. Instructed to discard and denature said tcs foods and always maintain all tcs foods at 41f or below at all times. Employee discarded said tcs foods during the inspection. Priority violation. Citation issued 7-38-005.

- comments: 4-301. 11 observed a cold holding unit with tcs foods inside, at an inadequate cold holding temperature of 53f during the inspection.
