23. Proper date marking and disposition
- comments: observed ready-to-eat, tcs foods held over 24 hours (salsas, beans, rice cooked chicken) not date marked to indicate the date in which the food must be discarded or consumed. Management instructed to date mark all ready-to-eat, tcs foods held more than 24 hours. Manager discarded #20 of food worth $100 priority foundation 7-38-005. Citation issued

36. Thermometers provided & accurate
- comments: must provide visible and working thermometers in front prep cooler.

37. Food properly labeled; original container
- comments: must properly label food storage containers when food is not in the original container.

38. Insects, rodents, & animals not present
- comments: observed two live small roaches crawling underneath storage shelving in rear dishwashing area. Also observed approximately 40 live small flies on walls behind 3-compartment sink and on shelving next to 3-compartment sink. Instructed to clean and sanitize areas. Additional pest control service is needed to eliminate roach and flying insect problem. Priority foundation violation 7-38-020(a). Citation issued.

41. Wiping cloths: properly used & stored
- comments: observed wiping cloths stored on top of prep tables behind meat counter. Must properly store wiping cloths in a sanitizing solution when not in use.

48. Warewashing facilities: installed, maintained & used; test strips
- comments: observed 3-compartment sink in front taqueria food preparation area not properly maintained. Observed waste water with food particles backing up fron second compartment sink into first compartment when water is release from third compartment of 3-compartment sink and slow draining. Must use 3-compartment sink in rear dish area to wash rinse and sanitize multiuse utensil. Prioirty foundation violation 7-38-025. Citation issued

49. Non-food/food contact surfaces clean
- comments: observed excessive amount of ice build up in the ice cream chest freezer located in front display area. Must remove excess ice detail clean and maintain.

51. Plumbing installed; proper backflow devices
- comments: observed rear hand washig sink located in dishwashing area draining slow. Must repair and maintain.

55. Physical facilities installed, maintained & clean
- comments: observed exessive amount of clutter and unnecessary items throughout rear storage area. Must remove clutter and remove unnecessary items to prevent rodent harborage.

- comments: previous core violations not corrected from 03/03/21 inspection report#2492339. #55. Observed wall cailing at the rear dish area 3-compartment sink blackened moldy and peeling. Must clean and repair. Observed grease and food debris under around and behind all heavy cooking equipment in front taqueria prep area and rear dishwashing area. Must clean and maintain. Must clean flors throughout rear storage area. #56 observed burn out light bulb above prep tables in front meat counter and rear dishwashing area. Must replace and maintain. Priority foundation violation 7-42-090. No citation issued.
