10. Adequate handwashing sinks properly supplied and accessible
- comments: no hot water is available at the left washbowl in the men's washroom. Maximum temperature noted at 88. 1f. Must provide hot water with a minimum temperature of 100f. Priority violation 7-38-030 (c) citation issued.

15. Food separated and protected
- comments: observed animal-origin raw burger patties in the bottom refrigerated drawer directly next to and touching ready-to-eat marcepan toppings for pancakes. Also observed ready-to-eat bread, some not bagged, stored directly next to and touching raw eggs in the walk-in cooler. All foods were removed. Reviewed proper food storage for raw and ready-to-eat foods. Priority violation 7-38-005 citation issued.

21. Proper hot holding temperatures
- comments: noted approximately 10 lbs cooked sausage in a pan under a heat lamp on the cooks line at inadequate hot holding temperatures ranging between 120f to 127. 4f. Food discarded. Reviewed proper hot holding temperature of 135f or greater. Priority violation 7-38-005 citation issued.

41. Wiping cloths: properly used & stored
- comments: all prep area wiping cloths must be held in the sanitizing containers provided between use.

43. In-use utensils: properly stored
- comments: noted the cooks line in use utensils ie: knives, being improperly stored in containers of ice water and containers of water under 135f. Must properly store protected.

47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: must not use tinfoil and use cardboard egg flats as a means of elevation for clean dishware on the cooks line. Must use cleanable material.

55. Physical facilities installed, maintained & clean
- comments: noted moldy wall caulking at the dish machine. Must replace.

58. Allergen training as required
- comments: no proof of allergen training or certificate for all city of chicago certified food managers. Must provide for all.
