- comments: observed no certified food manager on duty while tcs foods are being prepared,handled and served such as eggs, chicken,coleslaw and fish. Must be on site at all times. (priority foundation 7-38-012)(citation issued)

8. Hands clean & properly washed
- comments: observed male employee handling and preparing food with gloves then left the prep area to go in the back and entered the walkin cooler and returned to the food he was preparing without changing gloves or washing hands. Priority violation 7-38-010. Citation issued

22. Proper cold holding temperatures
- comments: observed raw eggs stored in front prep cooler ranging from 48. 7f- 55. 3f. Instructed manager that eggs must remain at 41. 0f or below. Manager discarded and denatured 24 eggs valued at $4. 00. Priority violation. 7-38-005. Citation issued.

23. Proper date marking and disposition
- comments: observed cooked beef in walk in cooler not date marked. Instructed manager that all cooked foods held for more than 24 hours must be properly date marked with the date the food will be sold, discarded or consumed. Manager discarded and denatured 3 lbs priority foundation 7-38-005. Citation issued.

25. Consumer advisory provided for raw/undercooked food
- comments: observed no consumer advisory, disclosure or reminder to inform consumers of the significantly increased risk of foodborne illness from consuming raw or undercooked meats, poulrty, seafood, shellfish or eggs.

41. Wiping cloths: properly used & stored
- comments: observed wiping cloths stored improperly. Instructed manager to store wiping cloths in a sanitizing solution between uses.

45. Single-use/single-service articles: properly stored & used
- comments: observed single use containers and aluminum pans improperly stored. Instructed manager to invert all articles and maintain.

47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed cardboard and aluminum foil used to line shelves. Instructed manager that all surfaces must be easily cleanable. Manager removed all cardboard and foil from shelves.

49. Non-food/food contact surfaces clean
- comments: observed accumulated food debris on interior surfaces of reach in coolers. Instructed manager to clean and maintain. (nonfood contact surfaces)

55. Physical facilities installed, maintained & clean
- comments: observed missing/damaged ceiling tiles in front prep area. Instructed manager to replace and repair. Must maintain.
