- comments: no paper towels are available at the rear prep and front prep hand washing sinks. Must provide at all times. Priority foundation violation 7-38-030(c) see the above violation #10 for citation.
21. Proper hot holding temperatures
- comments: observed approximately 7 lbs of assorted meat and cheese pizzas held at improper hot holding temperature in unheated metal shelving with no time/temperature logs on site. Pepperoni pizza at 80. 9f. Estimated $70. 00 pizzas discarded. Reviewed proper hot holding temperatures. Priority violation 7-38-005 citation issued.
22. Proper cold holding temperatures
- comments: observed the following tcs foods held at improper temperatures in the walk-in cooler. Mozzarella cheese at 47. 3f, pepperoni at 47. 1f. All foods discarded. Priority violation 7-38-005 see the above violation #21 for citation.
33. Proper cooling methods used; adequate equipment for temperature control
- comments: walk-in cooler unable to maintain an adequate temperature of 41f or below. Ambient temperature was noted at 50. 3, with foods such as pepperoni at 47. 1f. The owner adjusted the thermostat, and the cooler lowered to 42. F during the inspection. Priority violation 7-38-005 citation issued.

- comments: must provide an effective beard restraint for the cook preparing pizzas/food.

- comments: all shelving throughout the front and rear prep, rear dry storage with food debris and dirt. Must clean and maintain. ----raw wooden shelving in the employee washroo must be painted/sealed.
52. Sewage & waste water properly disposed
- comments: observed a large hole in the wall next to the three-compartment sink with a severed wastewater pipe. Noted waste water draining from piping onto the floor and attached grease trap overflowing onto the floor with wastewater. Priority violation 7-38-030(c) citation issued. The plumber arrived on site and resolved both issues.

- comments: must not store uncovered garbage cans on the rear patio.

- comments: floors throughout the facility with dirt and debris. Must clean and maintain.
