Chicago, 60624 Illinois, United States

Inspectors found significant food safety violations involving temperature control. Several refrigerated foods, including chicken wings, chicken breast, Italian beef, sour cream, and sliced tomatoes, were being held at 51.3°F to 52.1°F, above the required 41°F or below. The manager was instructed to discard about $10,000 of food. The walk-in cooler was also not maintaining a safe temperature and was tagged as held for inspection until it could be reinspected by the Chicago Department of Health. Citations were issued for these violations.

Another significant violation was that no metal stem thermometer was available to check internal food temperatures, and a citation was issued. Inspectors also found food storage and cleanliness issues, including missing or broken lids on bulk containers, food stored on the floor in the walk-in freezer, soiled wiping cloths left on a prep table, crates used as shelving, and food debris and grease buildup on equipment, shelves, containers, and floors in prep and storage areas.
