- comments: found cold tcs foods at improper cold holding temperatures inside the 3-door prep cooler. Raw chicken, raw beef, raw pork, eggs, raw fish, and tofu found at temperatures ranging from 44f to 48f. Instructed to discard and denature said tcs foods and always maintain all cold holding tcs foods at or below 41f. Priority violation 7-38-005. Citation issued. Food discarded.

- comments: observed approximately 15 live flies on the dish machine and in the mop sink area. Instructed management to contact pest control for service to eliminate all pest activity from the premises. Priority foundation 7-38-020(a). Citation issued.

- comments: must detail clean all non-food contact surfaces throughout the facility in contact with sewage water. Must detail clean all splash areas under dish machine, prep tables, and shelving throughout facility.
52. Sewage & waste water properly disposed
- comments: observed standing waste water at the floor drain near the walk-in coolers and the floor drain inside the soda machine room, as well as throughout the facility. Instructed management to call a licensed plumber to repair drains and to discontinue kitchen operations until plumbing is fixed. Priority violation 7-38-030(c). Citation issued.

- comments: instructed to remove all sewage water from floors inside facility, and to detail clean all floors and walls that have had contact with sewage water. Must clean behind and underneath cooking equipment on cooks line and work tables, and underneath the dish machine/mop sink drains.
