- comments: found low temperature dish machine inadequately sanitizing (chlorine) dishes at 10 ppm. Instructed manager to provide adequate sanitizing concentration at all times. Priority violation. 7-38-025. Citation issued.
21. Proper hot holding temperatures
- comments: found improper hot holding temperatures of approximately 35 chicken/beef wraps at 95-97f located in hot holding unit on service hotline. Instructed manager to provide a minimum hot holding temperature of 135f at all times. Instructed manager to discard and denature approx 15 lbs at $390. Priority violation. 7-38-005. Citation issued.
22. Proper cold holding temperatures
- comments: found improper cold holding temperatures for time/temperature control for safety foods ( cooked kale, cooked quinoa salad, cooked yams) ranging from 48f - 65f located in food prep area and cold holding unit. Instructed manager to provide a minimum cold holding temperature of 41f at all times. Instructed manager to discard and denature approx 10 lbs at $100. Priority violation. 7-38-005. Citation consolidated with above violation.
36. Thermometers provided & accurate
- comments: found no thermometer in cooler located in front prep/expediter area and reach in cooler at coffee station. Also noted no thermometer inside hot holding unit. Must provide thermometer inside equipment of all cold and hot holding units.
38. Insects, rodents, & animals not present
- comments: observed approx. 30 small flies in the following areas: smoothie station, inside powder vegetables, food prep hotline and inside meatball container located in cold holding unit on hotline. Must minimize small fly activity. Recommended contacting pest control. Priority foundation violation. 7-38-020(a). Citation issued.

- comments: found no hot water on site( 3 compartment sink, all handwashing sinks). Hot water generation and distribution systems shall be sufficient to meet the peak hot water demands throughout the retail food establishment. Priority violation. 7-38-030(c). Citation issued.
