There are many components of Cajun food that could be the source of food poisoning. Shellfish, when eaten raw or undercooked, can be contaminated with Vibrio Vulnificus. A vibriosis infection occurs within 24 hours of consuming the contaminated shellfish and is accompanied by watery diarrhea, nausea, fever, and chills.
