    It is common to get food poisoning from chicken wings. The highest risk comes from eating undercooked or raw chicken that can pass on salmonella bacteria. Symptoms of salmonella food poisoning can begin as early as 12 hours after infection and can include bloody diarrhea, cramping, and fever.

    - comments: observed no hand drying provision in the employee toilet room in the food prep area and at the handwashing sink in the dishwashing/ food prep area. Must obtain, repair, and maintain. Priority foundation violation 7-38-030(c). Citation issued

The following food items found out of temperature in the two door refrigerator: egg rolls (54. 2f), chicken wings (54. 5f), crab rangoon (53. 1f), whole ducks (52. 1f), chicken (54. 5f). Found 4-15 dozen boxes of eggs at improper temperatures ranging 58. 2f-59. 0f in the walk-in cooler. The manager discarded approximately 50 lbs at $300. Must have cold-holding foods at 41. 0f or below. Priority 7-38-005, citation issued

    - comments: observed improper temperature of refrigerator at 52. 7ff with tcs foods stored inside for sale. A held-for-inspection tag has been placed on the unit. Once repaired, email cdph. Must have cold holding units at 41. 0f or below. Priority 7-38-005, citation issued

    38. Insects, rodents, & animals not present
    - comments: observed evidence of pest infestation and live roach activity. Observed approximately 400 mouse droppings on the floor in the following areas: under the dishwashing machine, three-compartment sink, employee toilet room, surrounding the hot water tank, surrounding the cold holding equipment in the storage closet in the dining area, under the shelving units near the aquariums at the rear. The following surfaces were observed with mice droppings: on the food prep tables in the rear and the front prep areas, on the shelving units under the food prep tables, inside of the food storage bin with msg, corn starch, and salt (all discarded at this time), in a bin with prepackaged items above the dry ingredients storage bins, on the prep cooler in the front food prep area, in the lower interior compartment of the deep-frying units. Observed two live roaches on the wall near the emergency light above the handwashing sink in the dishwashing/ food prep area. Instructed to eliminate live roach activity, remove mice dropping, clean and sanitize all affected areas, and recommended contacting pest control for a service priority violation 7-38-020(a), citation issued

    - comments: observed three storage containers of meat stored on the floor under the shelving unit of a food prep table at the rear. Instructed to refrain from storing food items on the floor.

    - comments: observed the grout outlining the drainboard of the low-temperature dishwashing machine with black-like substance. Instructed to deep clean or replace said grout and maintain.

    - comments: observed the following with encrusted grease and not clean: the outerior and interior of cold holding units, the shelving units under the food prep tables, crevices between equipment and food prep tables, and cooking equipment. Instructed to clean and maintain said equipment.

    - comments: observed mop sink overflowing with sewage water and not draining. Instructed to repair said mop sink to drain and maintain properly. Priority violation 7-38-030(c), citation issued.

    - comments: observed container of raw chicken in walk-in cooler with pungent, foul smell and evidence of spoilage. Instructed to discard. Person-in-charge discarded chicken. Priority violation. 7-38-005 citation issued.
