La salade d'algues, comme d'autres produits frais, peut être à l'origine d'une intoxication alimentaire. En 2020, plus de 3 000 étudiants japonais sont tombés malades après avoir consommé de la salade d'algues contaminée par E. coli. Les symptômes d'une infection à E. coli apparaissent 2 à 7 jours après la consommation et se caractérisent par de la diarrhée et des crampes abdominales.
