Inspectors found several significant food safety violations during the inspection. A handwashing sink in the rear prep and dishwashing area did not have hot enough water for proper handwashing. Several cold foods, including fish salad, tuna salad, and deli meats, were held above the required cold temperature, and the display cooler in the sandwich prep area was not cold enough. Inspectors also found packaged prepared foods without required date labels, including roast beef, meat sauce, sauce and sausage, escarole and beans, and cooked chicken. These foods were voluntarily discarded, and citations were issued.Inspectors also observed pest activity, including about 75 or more small live flies in prep and storage areas and about 16 rodent droppings under a sausage stuffing machine. An outside garbage container was overflowing with its lid open. Additional issues included rusted prep table shelving, food debris on equipment and shelving, standing water under cooling units, grease and food on floors, and a previously cited allergen training violation that had not been corrected. Citations were issued for the significant violations.
