35. Approved thawing methods used
- comments: observed improper thawing procedure on chicken wings. Instructed management, thawing must occur under refrigeration that maintains the food temperature at 41. 0f or less or completely submerged under running water or thawed in a microwave oven and immediately transferred to conventional cooking equipment with no interruption in the process. Instructed to maintain correct thawing procedures.

- comments: noted dead cockroaches on glueboards in prep/cooking area, on floor in dining area and in buffet cabinet. Must remove glueboards with dead insects.

Found over 500 rodent (mice) droppings throughout premises: along the walls in prep/cooking area, under prep and storage shelves, dishwashing area, front/rear storage areas, dining area underneath seats, underneath buffet steam table. Instructed to remove all droppings and eliminate rodent activity. Clean and sanitize the affected areas. Instructed to contact license pest control for additional service. Priority violation 7-38-020(a).

- comments: instructed to transfer food products from an open original can container into food grade container for proper food storage inside cooler.

- comments: instructed to detail clean and maintain interior and exterior surfaces of all coolers and freezers, food storage containers, prep shelves, storage shelves, sides of all cooking equipment, interior and exterior surfaces of dishmachine. Additionally instructed to detail clean and maintain interior and exterior surfaces of all cooking equipment, kitchen hood and filters with excessive grease accumulation, interior and exterior surfaces of all coolers, interior surfaces of (2) 3 compartment sink, all handsinks, mopsink etc. Keep all equipment free of accumulated grease, food debris and dirt.

- comments: instructed to clean, repaint or replace rusty metal storage racks inside walk-in freezer and in rear storage area.
