High Priority - Rodent activity present as evidenced by rodent droppings found. Observed Approximately 30 Rodent droppings around the mop sink and stand up reach in cooler in the back kitchen area. Approximately 50 rodent droppings around the water heater and stand up freezer in the back kitchen area. Approximately 20 rodent droppings under the dish machine. Approximately 30 rodent droppings under the equipment on the cook line. **Warning**

High Priority - Shell eggs not stored at an ambient air temperature of 45 degrees Fahrenheit or less. Raw shell eggs stored at room temperature on the cook line. Manager stated the eggs had been at room temperature for 1 hour. Manager placed the eggs in the reach in cooler. **Corrective Action Taken** **Warning**

High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Swiss cheese 59F stored stacked above the fill line in the top section of the reach in cooler on the cook line. Manager stated the cheese had been stored in the reach in cooler for 2 hours. Manager placed the cheese in the bottom section of the reach in cooler. **Corrective Action Taken** **Warning**
