10. Adequate handwashing sinks properly supplied and accessible
- comments: noted hand washes sink at the food prep area next to the 2 compartment sink inaccessible with large trash can, chair and food containers in front of the sink. Manager immediately had
employees remove mixer and tanks from the hand wash sink. Instructed to have all hand wash sinks accessible at all times. Priority foundation violation #7-38-030(c)
38. Insects, rodents, & animals not present
- comments: noted over 50 flying insects on walls, shelves, ceilings, and equipment at the rear food prep area and food/dry storage area. Instructed to detail, clean, and sanitize affected areas, eliminate pest activity. Instructed to consult with pest control company and have premises treated. Priority foundation #7-38-020(a)
41. Wiping cloths: properly used & stored
- comments: noted dirty wiping cloths on prep tables at front and rear prep areas not properly stored. Instructed to properly store all washcloths in a sanitizing solution, especially when not in use
47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: noted ice scoop stored inside ice machine on ice. Instructed to remove and provide an ice scoop holder.
53. Toilet facilities: properly constructed, supplied, & cleaned
- comments: noted washrooms on-premise with garbage receptacles and no lids. Instructed to provide trash cans with lids at all women washrooms and unisex washrooms
55. Physical facilities installed, maintained & clean
- comments: instructed to detail clean and maintain floors along wall base and underneath equipment, floors underneath the 2 compartment sink, rear food prep/dishwashing area. Must maintain dry floors and also clean floor drains.
56. Adequate ventilation & lighting; designated areas used
- comments: noted heavy dirt and grease accumulation inside, on pipes/conduits and on edges of the exhaust hood and filters above cooking equipment. Instructed to detail clean and maintain hood, filters and pipes/conduits.
60. Previous core violation corrected
- comments: noted the following core violations 49, 55, 56 with the rules numbers below from inspection #2456639 dated 11/16/2021 not corrected:- #49) 4-601-11(b) instructed to clean and maintain shelves inside the walk-in cooler with dirt and debris. #55)-6-201-11 instructed to clean and maintain floors along wall base and underneath equipment, especially at the dishwashing area and 2 compartment sink area. Must also clean and maintain floor drains. #56)6-304-11 noted cooking stoves in the kitchen, not under the exhaust ventilation hood system. Instructed to have all cooking stoves and grills under the exhaust hood. Instructed management that must correct all the above violations. Priority violation #7-42-090. No citation was issued.
