- comments: the following tcs foods found held at inadequate cold holding temperatures in the below mentioned coolers at improper temperatures. Salmon at 54. 8f, cheese at 47. 3f, dairy based dressing at 58. 1f, corned beef at 59,3f with approximately 155 lbs of other assorted tcs foods ranging between 45f to 70f at an estimated value of $5000. 00. All foods discarded. Priority violation 7-38-005 citation issued.

- comments: noted four (4) coolers on the cooks line unable to maintain adequate temperatures. Cooks line two door cooler found at 57f with a dairy based dressing at 58. 1f. Drawer cooler at 61. 5f with salmon at 54. 8f. Another two door cooler at 58f with corned beef at 59. 3f and a tall reach-in cooler at 47. 8f with cheddar cheese at 47. 3f. All coolers tagged held for inspection and must not use until repaired, maintains a temperature of 41f or below and c. D. P. H contacted for inspection and tag removal. Priority violation 7-38-005 citation issued.

- comments: noted a cocktail shaker without a handle being used as an ice scoop inside the bar ice bin. Must provide a proper ice scoop with a handle inverted in the ice.

- comments: all stored items throughout the bar including liquor bottles, must be elevated from the floors 6' or above.

- comments: wooden door frame of the bar reach-in cooler in poor repair with dirt, peeling seal, water damaged rotting wood. Must replace to be non-absorbent smooth and cleanable.

Must repair/replace to be smooth and cleanable. ----blackened, moldy wall and wall caulking at the dish machine area. Must remove/replace/clean. ----pooling liquid on the floors in several areas throughout the basement. Must remove and maintain dry floor. ----dirty, soiled light shields throughout the cooks line. Must clean and maintain.

- comments: missing floor drain cover on the floor drain at the entrance to the basement employee washroom. Must provide/replace.

- comments: no proof of food handler training or certificates for all employees. Must provide.

- comments: previous core violations from report #2546174 on 1-5-22 were not corrected. #37- all bulk food containers, including bulk spices on the cooks line, must be labeled with the product common name. #41-: all prep area wiping cloths must be held in a container with a sanitizing solution between use. #47- must not use duct tape as a means of repair on metal seams on the walls of the dish machine area. Surfaces must be smooth and cleanable. #49-: interior of the kitchen coolers with excessive food debris. Must clean and maintain. ----excessive rust and encrusted food debris on the tabletop can opener. Must replace or remove rust, and food and keep clean after each use. #49- must not use cardboard as a liner for shelving inside the bar walk-in cooler. Surfaces must be smooth and cleanable. #55- floor behind the bar with some debris. ----dirty floor drain under the kitchen three-compartment sink. Must clean and maintain all. ----floor of the basement employee washroom in poor repair with damaged/missing floor tiles unable to clean. Instructed to replace/repair to be smooth and cleanable. #55- several areas throughout the basement with piled items, unable to access for cleaning and monitoring. All unnecessary items throughout the basement must be removed and all other items stored elevated and organized. #56-: missing light shield above the pizza prep area. Must replace. Priority foundation violation 7-42-090 citation issued.
