- comments: observed food handler take out garbage in outside rear and return to rinse hands at warewashing scrape sink filled with soiled equipment, and then continue to prepare food. Instd to properly wash hands at handwash sink with soap and use proper hand drying device. Warewashing sink may not be used to clean hands. Citation issued 7-38-010 priority foundation

- comments: the following tcs foods in large deep tightly covered containers (condensation under covers) at improper cold holding temperatures in reach in cooler: cooked beans 49. 1f , cooked chicken soup 50. 0f, cooked salsa 47. 9f-48. 0f, rice 50. 2f all cooked yesterday. All discarded and denatured at this time, approx 20lbs $200 value. Citation issued 7-38-005 priority

- comments: missing disclosure for consumer advisory on the menu. Instructed to disclose on the menu which foods (ex, eggs, hamburgers, steak) can be ordered under cooked/cooked to order with an asterisk next to those specific items; and then by asterisking them to a footnote that states these items are served raw or undercooked or contain (or may contain) raw or undercooked ingredients and also a reminder statement such as 'consuming raw or undercooked meats, poultry, seafood, shellfish, or eggs may increase your risk of foodborne illness, especially if you have certain medical conditions' priority violation 7-38-005

Instd to properly cool: (1) arrange in equipment to provide maximum heat transfer through the container walls; and (2) loosely covered or uncovered if protected from overhead contamination during the cooling period to faiclitate heat transfer from the surface of the food
