Chicken Food Poisoning

Chicken is associated with more food poisoning outbreaks than any other food according to research by the CDC. Campylobacter and Salmonella bacteria are commonly associated with chicken. Eating undercooked chicken increases the risk of illness, as does eating food that has cross-contamination from raw chicken or its juice.

Other possible bacterial contamination in chicken can include Enterococcus, E. coli, Staphylococcus aureus, and Listeria monocytogenes. Symptoms of chicken food poisoning from the different bacteria can be very similar and maybe mild including diarrhea, nausea, and vomiting to severe such as an infection of the bloodstream in children and people with a weakened immune system. The onset of illness after consuming tainted chicken can start as soon as 1 hour in the case of Staph to 5 days in the case of Campylobacter.

Salmonella and Campylobacter contamination are currently allowed in raw poultry sold in US supermarkets, so it is extremely important to properly handle and cook poultry by cooking it until it is completely done and thoroughly wash any surface that raw chicken touches.

Some additional recommendations from the CDC to avoid Chicken food poisoning:
- Place chicken in a disposable bag before putting in your shopping cart to avoid cross-contamination
- Wash your hands with soapy water for 20 seconds before and after handling chicken
- Do not wash raw chicken and use separate utensils and cutting boards for raw chicken
- Always follow cooking instructions for frozen chicken even if you believe it is precooked
- Ensure that the chicken at home or in restaurants is thoroughly cooked to 165 degrees
- Properly refrigerate or freeze leftover chicken within 2 hours to avoid long exposure in the danger zone

Chicken is the most commonly consumed meat protein in the United States and also the leading cause of food poisoning, so it is essential to keep safety in mind when preparing chicken at home or eating it at a restaurant.
