Report date: Apr 23, 202621. Proper hot holding temperatures
- comments: observed the following hot tcs foods at improper hot holding temperatures in hot hold unit in grocery area near meat department (approximately 20 lbs tyson traditional rotisserie chicken, 10 lbs tonys buffalo chicken 3 lbs chruncy chicken sandiches, 12 lbs tonys roasted chicken, 1 lb fish patty, 2 lbs burgers,. 5 lbs chicken nuggets, 2. 5lbs pollos marinado asado. Noted all said food items ranging between 75-109f. Instructed to hold all hot food items at 135f or higher and maintain as required. Pic voluntarily discarded and denatured food at this time. Total cost $50. Priority violation. #7-38-005. Citation issued.
22. Proper cold holding temperatures
- comments: observed the following cold tcs foods at improper temperatures stored inside display cooler in grocery during time of inspection approximately 90lbs total of the following items lbs of variety cooked chicken parts, tamales, macaroni and cheese, sliced gyro meat, taziki sauce, baby back ribs, egg rolls, refried beans, and potatoes all ranging between 49-55f. Noted approximately 110 lbs of packaged breakfast sausages, bacon located in display cooler in same said area with products ranging from 50-55f. Pic voluntarily discarded and dentaured said food items. Total cost approximatley $500. Instructed to hold all cold tcs @41f and below and maintain as required. Priority violation. #7-38-005. 33. Proper cooling methods used; adequate equipment for temperature control
- comments: observed display cooling unit located in grocery storing tcs foods (various breakfast sausage, bacon and ready to eat foods) at improper temperature. Noted unit @ 55f during time of inspection. Instructed to repair equipment and maintain temperature of 41f and below at all times. Priority violation. #7-38-005. Citation issued. Unit tagged and held for inspection.
36. Thermometers provided & accurate
- comments: observed multiple cooling units (dairy, sourcream, cheese, deli meats, breakfast sausages, bacon, salsas and guacamole) etc in grocery without thermometers inside. Instructed to provide and maintain.
38. Insects, rodents, & animals not present
- comments: observed dead mouse on glue trap outside seafood walk in cooler as well as 5 adhesive fly trap ribbons covered with dead flies above display cooler counters in meat department. Instructed to remove, clean and sanitize areas.
47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed torn gaskets on 2 door refrigeration unit located in meat and sandwich/salad prep area. Instructed to replace and maintain

- comments: observed cooling units containing produce as well as sauces with dried food debris on surfaces. Instructed to clean and maintain.
55. Physical facilities installed, maintained & clean
- comments: observed mops stored inside soiled water filled mop buckets in rear storage area. Instructed to hang soiled mops to properly dry in between uses and maintain.
