- comments: observed handwashing sink water temperature ranging from 68f - 74f located in women and men's toilet room on 2nd floor. Instructed manager to provide a minimum hot water temperature of 100f at all times. Priority violation. Citation issued. 7-38-030(c). Citation issued.
16. Food-contact surfaces: cleaned & sanitized
- comments: observed pink and black mold-like substance throughout interior of ice machines. Also noted said substance on ice panel. (both upstairs and basement ice machine) instructed to clean, sanitize and maintain. Ice machines are used for human consumption. Priority foundation violation 7-38-005, citation issued.
22. Proper cold holding temperatures
- comments: observed improper temperature of tcs foods such as fried chicken (52. 0 f),sliced tomatoes (53. 7 f),cheese mixture (46. 2 f),sliced cheese (cheddar, mozzarella, pepper jack, swiss, parmesean, blue cheese,provolone 48. 2-63. 0f),brats(60. 7 f),hot dogs (53. 2 f), italian beef meat(50. 3 f),brisket(50. 0 f),s shredded lettuce(43. 0 f) (. The manager discarded the product. Must have cold-holding foods at 41. 0f or below. Appx. 28. 5lbs $180 worth of food items discarded. (priority 7-38-005), citation issued.
33. Proper cooling methods used; adequate equipment for temperature control
- comments: observed two cold holding units at an improper cold holding temperature of (47. 3 f and 50. 0 f)during the inspection. Instructed to discard all tcs foods and not use said cooler until it's repaired and reinspected. Unit tagged. Instructed all cold holding units must maintain a proper cold holding temperature of 41f or below at all times. Priority violation. 7-38-005,citation issued. Cooler serviced at time of inspection, coolers now at 41f
37. Food properly labeled; original container
- comments: observed bulk containers in the food prep area with no labels of the food item's common name. Instructed to label all food items that are not in their original content with the food item common name.
44. Utensils, equipment & linens: properly stored, dried, & handled
- comments: observed clean kitchenware(rubber flat edge spatulas) in the dishwashing area not inverted. Instructed to invert all said kitchenware to avoid possible contamination.
51. Plumbing installed; proper backflow devices
- comments: observed black standing water in the employees toilet room that is no longer in use located in the basement. Instructed to clean, sanitize, repair and maintain said area. Priority violation 7-38-030(c), citation issued.
