- comments: observed three containers of raw chicken being stored directly over ready to eat crab sticks, cooked noodles and cut greens in the walk-in cooler. Instructed to properly store raw and ready to eat foods separated
and protected. Foods discarded. Priority violation 7-38-005 citation issued.
16. Food-contact surfaces: cleaned & sanitized
- comments: low temperature chemical dish machine not properly dispensing chlorine sanitizer after several attempts while dishes where being washed. 0 ppm chlorine noted. Instructed to set and use the three compartment sink to wash, rinse and sanitize. Machine tagged held for inspection and must not use until repaired and c. D. P. H contacted for re-inspection and tag removal. Priority violation 7-38-025 citation issued.
23. Proper date marking and disposition
- comments: observed prepared tcs foods throughout coolers such as cooked chicken, cream cheese and crab filling, assorted sauces, crab sticks, cooked noodles not properly date labeled with expiration dates no longer than 7 days. All foods either not labeled or with days of the week, no dates. Instructed all prepared tcs foods held longer than 24 hours must be date labeled with an expiration date no longer than 7 days. Priority foundation violation 7-38-005 citation issued.
35. Approved thawing methods used
- comments: observed frozen crab sticks being thawed on a prep table. Instructed to properly thaw all tcs foods under refrigeration or use the proper cold running water method.
47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: must not use cardboard as a shield or guard attached to the back of the ice machine and wall. All materials for attached equipment must be smooth and cleanable.
48. Warewashing facilities: installed, maintained & used; test strips
- comments: no chlorine chemical test strips on site to monitor sanitizing level of the chlorine chemical dish washing machine. Must provide. Priority foundation violation 7-38-005 citation issued.
49. Non-food/food contact surfaces clean
- comments: noted the top of the dish washing machine with excessive dirt and food debris. Must clean and maintain.
51. Plumbing installed; proper backflow devices
- comments: leak at the nozzle on the three compartment sink repaired with a cloth towel. Must properly repair leak.

- comments: noted the floor drain under the dish washing machine extremely dirty with excessive food debris. Must clean and maintain.

- comments: noted employees personal belongsings being stored in several food prep and food contact areas. Must provide a designated area for employees personal belongings.
60. Previous core violation corrected
- comments: previous core violations from 7-25-19 #2303726 not corrected #16-: noted upper and compartment of ice machine not cleaned. Instructed to properly clean, sanitize and maintain. #37- noted assorted food items not properly labeled. Instructed to properly label all food items with product name including bulk food containers. Priority foundation violation. No citation issued.
