Seafood Food Poisoning

Food poisoning from seafood is usually caused by toxins. Shellfish paralytic food poisoning is very common. The Symptoms can begin half an hour after eating and include tingling, numbness, and temporary paralysis. Neurotoxin poisoning can lead to slurred speech, diarrhea, and vomiting.

Open containers of oil condiment buckets by the hand sink by the back walk in cooler, bucket of batter used for deep frying was on the floor near the back prep sink, two buckets with lids of sauce condiments on the floor of the back walk in cooler, box containing minced garlic in dry storage, bucket of sliced potato in front walk in cooler, container of butter stored by the cook line.
- An open package of Panko bread crumbs was not in a sealed container.
- Three compartments of a prep sink were filled with standing water to thaw seafood.
- Two boxes of packaged imitation crab meat were thawing at room temperature - were measured at 54°F, for less than 4 hours. - The boxes of imitation crab meat were stored on a shelf underneath a prep table across from the west walk-in cooler.
- Utensils were stored in bucket of 65°F standing water - must be at least 135 degrees.
- Wares were stacked on shelving in a position that is not self-draining or allows for air drying.
- Red powder in a bulk food container was not labeled.
- Vent shrouds in dry storage room above a prep table have heavy visible accumulation of dust and debris.
- Personal snacks were stored on a prep table with a cutting board and knife.
- A soiled apron and phone charging cord were stored on a shelf above an open container of chicken powder.
- The clean water supply hose behind woks and oven is leaking. The outer walls by front walk-in cooler have paint peeling and wall is not easily cleanable.
- The back door is not sealed on the bottom edge to prevent entry of pests. This is a repeated violation.
- The back door still needs a new door sweep installed on the bottom and has a visible gap that cannot protect against entry of pests.
- A hand sink is not draining into the basin. The waste water nearly overflowed the basin after washing hands.
- The storage room containing liquids has acoustic ceiling tiles. Materials of ceiling in areas that can become soiled with liquid need to be smooth, durable, non-porous, and easily cleanable.
- The juncture between floor and wall near front walk in cooler has broken coving.

28. Toxic substances properly identified, stored, & used
- comments: observed open bait packages and open sticky rodent traps throughout facility, especially in the basment. Insturcted to remove all open rodent bait stations and informed manager that rodent bait shall be contained in a covered, tamper-resistant bait station. Priority violation 7-38-015, citation issued

- comments: observed a dead mouse on an open sticky trap behind the pallets surrounding the hot water tank in the basement. Instructed to remove dead mouse and maintain.

- comments: observed pest activity. Observed approximately 100 mice droppings throughout. The following floors were observed with mice droppings: in the office area, inside of the walk-in cooler next to the butcher prep area, mop sink, the toilet rooms, near the freezer units across the seafood and meat prep area, the freezer units across from the office, the front counter near the front entrance, near the packaged goods such as red rice and red sorghumhold stored in the corner at the rear left of the office, in the basement near the hot water tank, wallbases, around the columns and pallets throughout the basement. Also, oberserved mice droppings on pallets behind the front counter area and in the basement throughout, inside of the lower opening behind the front serivce counter, and on the lower wooden unit under the prepackaged dessert items near the checkout registers. Instructed to eliminate pest activity, clean and sanitize affected areas and recommended contacting pest control for a service priority foundation 7-38-020(a), citation issued

- comments: observed an opening in the wall behind the refrigerator near the receiving door/ employee break area. Instructed to repair said wall and maintain.
