    Multiple carnitas-related outbreaks have been linked to unsafe food handling practices that occurred after cooking. Salmonella poisoning symptoms reportedly appeared in Kenosha, Wisconsin on May 8th and May 10th, 2015. A total of 70 people were affected by the infected pork. Abdominal pain and diarrhea are two common symptoms.

    - comments: found improper hot holding temperature of carnitas ranging from 125f - 130f located in front food dispensing area under heat lamp. Manager voluntarily discards said food item at 60lb cost $100. Instructed to maintain a minimum hot holding temperature of 135f. Priority violation. 7-38-005. Citation issued.

    38. Insects, rodents, & animals not present
    - comments: found approx. 20 mouse droppings under rear dry storage area. Also notes 4 large flies and 5 small flies in said area. Must minimize fly activity. Also, instructed manager to remove droppings, clean, sanitize and maintain said areas. Recommended contacting pest control. Priority foundation violation. 7-38-020(a). Citation issued.

    48. Warewashing facilities: installed, maintained & used; test strips
    - comments: observed large pots for cooking carnitas, salsa's,etc. Unable to fully submerge in basins of 3 compartment sink. Instructed to provide written procedure to adequately wash, rinse and sanitize cooking equipment.

    52. Sewage & waste water properly disposed
    - comments: found waste water leaking from grease trap located in front prep area. Sewage shall be conveyed to the point of disposal through an approved sanitary sewage system that is constructed and maintained. Priority violation. 7-38-030(c). Citation issued. Instructed to no longer use said 3 compartment sink.

    54. Garbage & refuse properly disposed; facilities maintained
    - comments: found inside garbage receptacle open. Must provide closed tight fitting garbage lids at all times.

    - comments: found no lighting in dry storage area located in basement. Instructed to provide.

    - comments: found continued non- compliance from inspection report # 2556801 conducted on 06/06/2022. The following previous core violations were not corrected: 6-202. 15 observed side exit door with 1/2 gap at the bottom.     The recalled products are:
    - 19- to 24-lb. box containing “Chicharrón con carne/Pork Skin with Meat” with lot codes 2193CON0281, 2203CON0283, 2213CON0285, 2223CON0287, 2233CON0289 and use by date between August 7-11, 2024, and shipping mark 176.

    The problem was discovered during routine FSIS surveillance activities of imported products, and it was determined that the products were not presented for reinspection.

    FSIS is concerned that these products may be available in retailers’ deli counters and available for consumers to purchase. Also, these products may be in retailers’ freezers. Retailers are urged not to serve these products.
