Corn Food Poisoning

Canned and frozen corn could be the cause of food poisoning. Canned corn has been recalled numerous times for Clostridium botulinum contamination, which results in a botulism infection. Similarly, frozen corn has been recalled on several occasions for Listeria contamination. Both infections can result in severe illness.

Instructed the person in charge to properly store and protect food items from contamination while stored by elevating at least six inches from the floor on raised shelving units. #41 - observed soiled wiping cloths being stored on multiple prep surface areas. Instructed the person in charge to properly store wiping cloths in a sanitizing solution between uses to prevent contamination of equipment & food. Must maintain #47 - observed rusted storage racks in the walk-in cooler and instructed the person in charge to remove rust and ensure surfaces were smooth and easily cleanable. #49 - observed grease buildup on cooking equipment, walls, surrounding floors, and shelving units in the kitchen/prep areas. Instructed the person in charge to degrease, clean, and sanitize. #51 - observed leak at base of faucet at the three-compartment sink, located in the rear prep area. Instructed the person in charge to repair leaks and maintain them. #55 - observed clutter stored on the floor in the rear storage area, located near the rear exit door. Instructed the person in charge to remove all unused articles and equipment to prevent pest harborage. #55 - observed grease buildup, food debris, and dirt on the floor under cooking equipment, along walls, and in all corners in prep, dishwashing, and storage areas. Instructed the person in charge to clean floors under all equipment, along walls, and in all corners in all areas
